Create a contact form on your website. The email will go through your webserver instead of the users mail client.
Reply:When you create a link like this: mailto:username@yahoo.com it will automatically bring up the default mail client to send a message. In this case, Outlook. to get around this, just put the e-mail message in plain text so that the users can copy and paste it into their own clients. username@yahoo.com
Reply:Use the mailto protocol. You should be able to configure your preferred mail client in the menus. Not sure exactly where, as I use Linux.

Naturally, Microsoft's products are going to default to Outlook, but Firefox (for example) is less likely to do this.
